Elaichi Patisserie opens in Vancouver with Indian‑inspired croissants

Owner Vinaya Waghmode blends French pastry techniques with Mumbai spices at the new Main Street shop.

A new bakery called Elaichi Patisserie opened at 2821 Main St. in Vancouver on Tuesday, offering Indian‑inspired pastries such as a samosa‑filled croissant, pear‑chai masala cinnamon croissant, pistachio saffron cake and herb chutney cheese croissant.

Owner Vinaya Waghmode says the shop combines French pastry methods with the bold flavours of Mumbai, noting that “Elaichi” means cardamom in Hindi and evokes memories of her hometown. She studied culinary arts in France before launching the venture, which operates Thursday to Sunday from 9 a.m. to 3 p.m. or until sold out.

Elaichi has previously sold goods at Granville Island Market, the Flavours of Hope café and various Vancouver farmers’ markets, but this is its first permanent location.
