Watermans, the two‑hat restaurant in Barangaroo opened by Bentley Restaurant Group in late 2025, announced that executive chef Darryl Martin is departing and the menu will be rebranded as modern Greek dining, according to the restaurant’s website and statements from the owners.

What happened

Martin, who previously ran the eastern Mediterranean‑focused Barzaari in Marrickville, left Watermans after less than a year in charge. The outlet reported that his exit follows “a combination of personal and professional considerations,” including his wife’s recent diagnosis of a neurological disorder that has limited her ability to work or drive.

Martin told SMH, “This disorder has left my wife no longer able to work, drive or safely be left alone at times…That, combined with different perspectives on direction and vision at Watermans, which I truly respect, I felt the time was right for me to pursue a different path.”

Bentley Restaurant Group owners Brent Savage and Nick Hildebrandt said, “There was already a heavy Greek influence on the menu, and moving to an all‑Greek offering is not a huge change. We see this as a positive evolution, and believe the new menu will be more focused, more elevated and Watermans will be a better restaurant for it.”
